Great Knives
There are 8 knives in the set plus a steel and the block itself. The full retail price of $399 or thereabouts was probably a bit hopeful and they were routinely available for $140 or so. At that price they are very good value indeed (this set is discontinued but I note you can still buy individual knives at $30-$40 each).
These look to be a copy of Wustof Classic Ikon, and they have done a great job:
- Bolsterles design
- Very cleanly forged
- Great heft and balance (except for mini chef knife)
- Good steel (same as Wustof DIN 1.4116, ice hardened HRC 55)
- Great factory edge
- Good looking block

We recently received of five cuisinepro knives in a block as a gift. We find these knives excellent product but we're extremely disappointed when I dropped the 20cm. Knife onto the tiled kitchen floor and the blade snapped in half under the handle. Is ther any redress or chance of replacement from the manufacturer?

Baccarat knives have a lifelong guarantee, therefore you shouldn't have any problem replacing it either at Robin's Kitchen or House which are both the same company.

There is not a lot of information about Sabre available unfortunately. Design wise - the Sabre is a more traditional German style with a full bolster, whereas the Cuisine Pro is (essentially) bolsterless (a nod to Japanese influence). The Sabre is cheaper, so suspect uses poorer quality steel. The Cuisine Pro uses DIN 1.4116 which is a good grade, hardened to about Rockwell 55, so holds an edge quite well. I notice that Baccarat have a new range of knives out, and they look quite good (a German style plus a Japanese Damascas treated one). Check these out!
...a little more detail on the damascas/Japanese style (brand Damashiro). They have used 420J2 steel, which is technically "Japanese grade"...but is really only suitable for knife cladding *not* the actual blade. Disappointing (they did this with the ID3 range too)...I did write to them about using a proper Japanese steel grade in that case (e.g VG10) but they ignored me - sigh.
