Global Sai-01 Chef Knife - awesome!
After the Global Sai-06, I liked it enough to try the smaller (19/20 inch) variant. This is also a 3 layer design protecting a differently heat treated Cromova18 cutting edge with Sus410 cladding.
Initial impressions - balance neutral (yay)... this is better than the larger 06 version! I think this is the optimum variant of this design - the balance being right makes it very nice to use indeed!

Globals (ground at 11 degrees), so a little session on the water stones and - wow - amazingly sharp! A very clean edge (as well/better than the classic Globals) that rivals my Miyabi Birchwood Gyuto! This guy is heavy (246g) with a relatively thick spine, so that it cuts as well as the Miyabi (177g) is simply astounding. I'm impressed and enjoying the knife. The cladding steel (sus410) is initially reactive (i.e leaves marks) to fingers and food acid...but this seems to decrease dramatically after some use...I'm not sure what is going on there, but I'm pleased that the effect is lessening.Similar opinion?
