I Have a Nishiro Valk and it says it has 2 levels of pedal assist it seems to be stuck in 2nd level assist which is way too fast for normal riding how do i get it to 1st pedal assist

It's not a mountain bike it's only designed for main roads. You can pedal if you want but you don't have to. Simply twist the accelerator and away you go!

Like the answer above, you can simply turn the accelerator grip on the right handlebar and it moves without any pedalling. The reply above calls this the 'motorbike' mode. It is a lot of fun to operate it in this way. You can go the other way too - simply use it as a 6 speed bicycle without any other assistance.
