I've just bought a ceramic water sharpener. The coarse wheel is fine but the fine wheel vibrates when sharpening large knives. Can anyone explain why? They are Global knives so should be fine. Is it because I'm not pressing hard enough but if this is the case then surely both wheels would vibrate?

Does this work on all brands of knives?

It works best on Global knives because they have a different edge angle from many other knives. I have used it on my Mundial knives quite successfully, but with them I also alternate with a steel. Hope this helps.

If you watch Mino on youtube giving a demo on sharpening Global Knives, he says that the 2 wheel mino sharpener is for the Global knives and the 3 wheel is for the European knives. Personally, I wouldn't use it for anything other than Global unless you buy the 3 wheel one. The Global knife is a different shaped edge to other brand knives, that's why they hold their sharpness so well and for so long. I was given a 13 cm flexible utility Global knife when they first came to Australia just over 30 years ago and in that time, I've only sharpened it about 10 times. Admittedly, I don't have a big family so the usage is not as much as some families but it's still my go to knife. Still going strong after 3 decades. I don't believe there would be many knives you could say that about. Global knives quality is outstanding. Mr Mino, the creator of the knife, is still doing demos in public and on youtube. He's adorable. In his 80's. He explains how the unusual edge of the knife is the secret to the success of the brand.

is the minoSharp suitable for serrated edge knives?

I don't think so. Think it's more suited for normal edges.

What is the difference with the colours of the wheels?

The different colours represent the differing coarseness of the wheels. The coarse wheel will grind away more material, more quickly. The finer wheel will grind away less and leave a finer cutting edge. Always use the finer wheel last.

What is the difference between a Global Minosharp 3 Ceramic Water Sharpener and a Global Minosharp Plus 3 Stage Ceramic Water Sharpener ( apart from the $1.00 difference in price ) ?

It only comes as a "plus". Check the MonoSharp website. They just missed the "plus" here.
