It is extremely difficult to fit a bull bar to a HiLux that is not specific to the year; ie, a bar from one year will probably not fit any other year. And it is difficult to fit if it is not for that year. If you want to gamble on buying one for a different year, go ahead - good luck with the electrics, air-bag compliance and everything else. If the fitting brackets are not the exact size, it will not fit. Find a reasonably priced new one, fitted by a professional and avoid the hassle. If you can't, do without.

I have carried 5x4 bales in a couple of different tubbed utes. Safe enough but will need a hand to open the tailgate

possibly a CV joint is on its way out, see how much movement the front wheels have.

Replacing the injectors should have fixed the problem, as black smoke is usually caused by fuel not being burned properly (Blue smoke indicates piston ring wear.) My 2008 HiLux has done 380,000 kms and does not blow much smoke at all, but I have serviced it regularly, and rarely drive it over 100 km/hr. Are you sure your mechanic actually replaced all that he said he had - this sometimes happens - they say they have done work, and rely on the fact that if you are not mechanically minded, you will not know if they have or not. Have a look at the injectors - do they look new. Also, check your fuel pump - it may have contaminated fuel - it should be quite easy to drain it to check for contaminants. There is probably a UTube showing exactly how to do it.
Also, if if was a workshop you are not familiar with, ask another shop to check the work.

Not sure of the exact weight, but I have towed closer to 2 tonne with my 3 l turbo. I seem to remember that, provided you have supplementary braking on the trailer, either electric or hydraulic, you can tow close to the weight of the towing vehicle. I have seen quite a few 20-odd foot caravans towed by similar vehicles, so it should be ok. If in doubt, check with your local road transport department, and don't forget, regulations are different in each state.

Buy a small trolley jack - they are much easier to use, are relatively cheap and don't take up much space. No idea where the standard jack is - maybe under rear seat.
