Some reputable research suggests we get less than 28% of the important nutrients we would have consumed 50 years ago. Wind is not necessarily a bad thing but may be more to do with the microbes in your digestive system (gut), than the nutrients themselves. We are essentially the secondary consumers of what we digest not the primary consumers. The food we eat is first ingested by friendly microbes. Gas as I understand it is the result of the ingestion by the microbes. One's microbe population (bouquet so to speak) can be changed by microbial enhancing foods such as particular yoghurts and other well known products that impact on the gut flora. As for looseness of bowels this may be the result of many things however in principle soft stool although may be indicative of other conditions is generally a reflection of a better functioning system than say hard stools.
