Hi, does this blender blend dates used for energy/bliss balls?

It depends how hard they are, soft medjool dates blend up fine, though I chop them a little first. For hard dates I always soak them in warm water first (with any water left in the kettle) for 5-10 mins while I prepare other ingredients and chop them a couple of tmes. That works well.

Can I grind raw chicken carcass in this machine?

I wouldn't recommend it, I don't think it is designed to do that.
