They would be fine. The alternative would be a strong cased highway terrain tyre. Be careful with the highway terrain tyres as some are very weak and can split on gravel rods.
Also I am running Toyo All Terrain 2 at the moment. They are also excellent. I have been to the Gulf and North Queensland fishing without an issue.
No they are not a "Light Truck (LT)" tyre. However, they would be good on a caravan (unless it is specified to have LT tyres that is). These are still a strong and robust tyre, as are the 980s, and should serve you well for a caravan.
Hi I would suggest that they would well suited from a weight perspective as the Land cruiser is over 2 ton. I would check with a supplier and be able to give them the size and weight of your caravan. As with any van tyre pressures would be very important to maintain as per their recommendations. I am on my second set now after just over 140k on the first set. Hope this helps.

Slightly larger diameter will affect your speedo. It should read slower.
As fisher480 says, your speedo will read slower than your actual speed by about 3.4% because the 265/75 tyres have a bigger diameter than the 265/70 tyres. Depending on the gearing in your SUV, this may not be a problem as most vehicles are set up in the factory to run about 5% slower than the speed shown on their speedo. The speed difference between the tyre sizes is similar to the speed difference when running brand new 265/70 tyres virsus old 265/70 tyres worn down to the wear indicator strips.

You're running at close to max load Kevin - therefore I'd run at 40 - 42psi and see how your Hilux handles. I understand that the max rated pressure is 44 psi as stated on the sidewall of the tyre, so you're going to need to stay under this.
