One of the most used equipment in the kitchen - Amazing
I bought the Breville Custom Loaf Pro BBM800 about 2 months ago. It is my first bread making machine.
After 2 weeks of use, the light stop working and the he fruits and nuts dispenser was not opening when using the sweet setting for fruit loaf.
I rang Breville and without a fuss, they organised for a replacement unit. Just had to go back to the shop, quote the reference number from Breville and took a new unit. Thank you Breville.

I have been using this bread maker every week to make different bread loaves, pizza dough, jam and asian buns. Absolutely love the machine for its ease of use. Just put the ingredients in, choose the proper settings and leave it to do its magic. It is also very easy to clean. Best Bread Machine by Breville
This is my 3rd Bread Maker I bought, the previous 2 I owned all ended up in my storage room after a few try. I read several reviews from Amazon.com & Product Reviews before I decided to buy it. I have been using it for 7 months so far & I am making 3-4 loafs a week. Really, there is no regret to invest in this machine. I tried a few loaf from the recipe provided by Breville. it make bread buns that you will find in Asian bread shop, which is really fun & you can be as creative as you want. I also created my own recipes for loafs, get a few friends to try, they all love it. I have 2 friends bought it last month after they tried my bread. Apart from it functionality, the stainless steel body & LCD display makes it look more superior than many other models on the market too. One last thing I love is the collapsible paddle, which do not form a big hole on the bottom of the whole. Well done Breville. Everything. Recipe book provided should be revised.5 comments

A Winner
I have had the BBM800 for a month now. Fantastic so far. It came along after a BBM100 (Breville's base model.) I actually enjoyed using the base model but in truth it cannot be compared with this one.
First the extra 250g capability makes this capable of producing just the right size for us all the time. I have only used smaller than the 1250g setting once or twice but have no need for any larger. We make about 7 loaves a week and have tried all bar about two of the included recipes plus others. Every included recipe works well.

st things noticed when moving from the smaller machine was that this produces a much better crust and a more consistent, higher loaf. Naturally, there are many more advantages such as programmability, jam making (though I have made a good bit of jam over the month I have not tried this as have never needed such a small quantity - it would be a straightforward way of doing it when small quantities of jam are sought,) the automatic nut etc. shute, the easy LCD operation, the easily cleaned stainless steel finish, the looks, the collapsible paddle, the light and more. Any problems it may have are slight and do not deter me from pronouncing this an excellent machine. These include very minor errors in the manual such as incorrect page references along with some language which could be clearer. The internal light only flicks on for a fraction of a second during the baking cycle. It works perfectly at all other times. This does not concern me as I don't really need to see anything at that time. In a call to the normally excellent Breville telephone advisory people they said this was normal. Despite my normal faith in them, I think it more likely that it indicates that perhaps this particular bulb or setup has a problem with the heat as there could be no reasonable need for the thing to flash on at all if it was not intended to work during this cycle. Anyway I would not send it back even if it was a fault as it is so minor but it would be good to know the bulb can be user replaced.12 comments

The larger loaf suits us better, the programmability is excellent, it produces better crusts the automatic nut and fruit dropper is good - excellent all round. We used to bake loaves in the oven, we still sometimes do but only those prepared in the BBM800. We never used anything but the Lauke pre-mixed flour (mostly crusty white or multigrain in the first. In the BBM800 apart from the first loaf with left-over pre-mix we have only used recipes (or our own concoctions) Once you get organised for that it is about as fast as pre-mix but provides infinitely more variety.I hope this machine is better than the BBM600 we have had 2 so far each lasting just over a year, a bit reluctant to try another Brevil !!

Great Appliance, Wonderful Result
I purchased my Breville Breadmaker BBM800 in November 2012. It was replacing a previous basic Breville Maker. The upgrade was incredible. The new machine is so much quieter and efficient, it makes breadmaking a pleasure. I mostly cook straight wholemeal loaves in the machine, but also use the dough only cycle to prepare sweet buns and bagels, which I then cook in the oven. ugh mixtures. It appears that this can occur with a stiffer dough, such as I have for the wholemeal bread. This is easily overcome by using the fixed paddle (the one designated for jam making) or else by ensuring dough is a little moister, As I always remove the paddle before the bread bakes, this is no problem for me - but if you decide to use this paddle Ensure that you do not leave the paddle in the loaf while it is baking. It is not designed for that purpose. I am so pleased I purchased this machine, and would not hesitate to recommend it to anyone contemplating buying a Bread Maker. Quiet, doesn't jump all over the workbench when in use, love the options for size, type of bread etc.Cooks beautifully. Apart from the collapsible paddle issue, no other problems at all.4 comments

s designed to be upright when kneading in one direction, and then collapse flat when kneading in the opposite direction. The original blade I had would start out upright, but once it collapsed, it would not revert to the upright position when kneading in the opposite direction. Firstly, I found that there was an issue with the original collapsible blade, which had 2 small arms attaching the paddle to the spindle. This seemed to become stiffer, the more I used it. It was very difficult to remove any residual dough from the mechanism even though it was not obvious. The blade in fact became so stiff that it was very difficult to even move it manually when out of the machine. I was advised by another user that she soaked the paddle in cooking oil each time she finished baking, and left it in the oil until the next use. Worked a treat. I also found that there is a newer type of paddle, which only has one point attaching the blade to the spindle. This newer blade never fails, and collapses perfectly every time without any need for the oil treatment. I am completely satisfied with my Breadmaker now that the issue has been resolved. By the way, thought I would pass on my recipe for a perfect wholemeal bread baked in the Breville BBM800, If you like seed in your wholemeal bread, just add it to the mix when you add the flour at the start. 400 mmls water 1 teaspoon saltHi, thanks for the reply Berne.

As long as I can make 100% Wholemeal bread in this machine, without having to interact with it, stop it, and change paddles like you were originally doing, I think I might get it. Thanks for the recipe too. I also want to mill my own flour to use in the machine. I'm still trying to figure out where to source the whole wheat from. Beats all hands down.
I bought this bread maker as I was not happy with my other (Panasonic) I have found this new one to be great, I like the amount of menu options I have and the kneading blade folds down to give me a fuller loaf. The inbuilt recipes are spot on. I have made 7 loaves and not one has turned badly. I love the large LED display. I am able to turn the beeper on and off.

Great Bread maker.
This is my first bread maker. While it was very expensive it makes brilliant bread. I have made plain white bread, fruit loaf, brown bread and wholemeal bread. Comes with a great instruction/recipe book which I also available online. The actuall bread tin is very easy to clean. One problem is that it is very large and takes up a lot of bench space. Would highly recommend this bread maker.
Easy to use and clean.
Bulky and expensive.

A Smart Bread Maker Worth the Extra Money
This is our second bread maker bought on the recommendation of a colleague. Our old model, a Sheffield, works fine and makes pretty decent bread. But the Breville BBM800 has three extra features that we saw as "must haves".
Firstly, the paddle is partly collapsible. That means that once it's done mixing the dough, the motor runs in reverse and the spring loaded arm of the paddle folds down. Only the spindle sticks up, resulting in a much smaller hole in the finished bread.

eason we make our own bread in the first place is we want to eat healthier. There is a dispenser that can automatically add your fruit and nuts at the optimum time, even on a normal bread cycle. We've made raisin bread and it was great. The LED display panel is large and clear and offers more settings than our previous machine, allowing us to fine tune the loaf just the way we want it. I've noticed Breville tend to build some intelligent features into their products and their BBM800 has its share: - A hold-button which lights the pan, so you can see how your bread is doing at any stage without opening the lid.Similar opinion? A couple of design flaws but Gluten Free Success!!!
We bought a bread maker as I can't eat gluten and the options at the supermarket are few and far between (and quite frankly all quite rubbish!) so thought baking my own was the way to go and cheaper. We got ours at Harvey Norman about six weeks ago for $188 which was half the price it seemed to be going for originally. I have just been following the recipes provided in the booklet buying all the individual gluten free flours (rice, potato, soy etc) rather than buying a premix packet. The recipe is fantastic. bit now but the bread is perfect every time and it lasts me a complete week. I did work out how much each loaf roughly costs and it didn't save me money but I think the bread lasts me longer and of course its edible as opposed to previously stated supermarket rubbish. The machine is really easy to use. All the functions and display menu etc couldn't be simpler if it tried (my partner can even follow it). The reason my review was 1 star from a complete rating is that the paddle in the bottom of the pan that mixes it all up constantly falls down; its meant to stay up for the whole mixing period and then fall flat for baking. If you are buying this machine for similar reasons to me my tip is to follow their instructions for the GF recipe (the country one is my preference) which is to mix the ingredients together before putting into the machine adding the yeast as the last ingredient after its in the tin. Then unfortunately keep checking the mixing through the viewing window. I also pause the cycle every now and then to begin with to give it an extra stir and even the mix out. If you notice the mix not moving much when you can still hear it spinning you have to pause the cycle and manouvre your dough around a bit to locate the fallen paddle. Also, the automatic seed and nut dispenser is useless. If you are adding things like cumin/carraway seeds, they just fall straight through the grill bit into the bottom of your bread maker which is silly and then when the time comes in the cycle for them to dispense, the tray doesn't fall correctly so nothing actually goes into your mix. I just add mine from the start myself or when I hear the dispenser opening I pause the cycle and add them then. Not a big deal but its one of their selling features which in my opinion could be better designed. Great recipes, easy to use Seed dispenser, mixing paddle1 comment

It works reallywell!
This is a very clever machine - worth every penny at $188 from Harvey Norman.
We use Woolies organic flour plus bread improver, takes less than 5 minutes to pour in the ingredients and the machine takes care of the rest - no mixing or kneading - the whole process takes around 2 hours. Costs less than $1 per loaf and so much better than that foam rubber that passes for bread from Bakers Delight or the supermarket!
Kids love making it and love eating it too!
Absolute winner.
Fulfils its promise.

Whilst the old machine had always been reluctant to let go of each loaf and also left a rather large hole in the base of the loaf from the kneading blade, this Custom Loaf machine leaves just a very small one from its innovative collapsible blade, and it tips the baked loaf out perfectly every single time.

the way it turns out with just the small 'dent'. Each loaf is absolutely delicious and perfectly baked with a lovely crust on the base and sides. It's easy to operate the machine after a quick read of the manual, and the loaves can be set to 500g, 750g, 1kg and 1.25kg. We find the 1kg size ideal for our family of 2 adults and 2 children in their late teens. I've only made the large 1.25 loaf once - the fruit loaf from the manual (delicious!), and it is a huge loaf! Slices did fit into a four-slice toaster if inserted on their side. I have tried quite a few of the recipes in the manual and all have worked beautifully except the Sourdough, which is a recipe requiring a starter that takes eight days to be ready - I've gone through the process twice now with similarly disastrous results! However, I now use the recipe from the old machine's cookbook, which uses plain yoghurt and lemon juice instead of a starter, and it remains our very favourite loaf.Similar opinion? We are brand new to bread making and wanted a machine that could make basic bread and later on use the custom setting when we gain more experience. We have honestly not had one loaf fail manly because we haven't tried any of the custom setting as yet.
We use the packet LAUCKE bread mix and it works nicely. This machine has a fruit nut & cheese dispenser, so if you like fruit nut bread you'll be happy.
It also has a Gluten & yeast free setting. A pizza dough, pasta and jam setting plus whole wheat setting....

I absolutely love it!
This is my first ever bread maker and I could not ask for any thing better. It is so easy to use and I like the variety of the recipe they provided. It is a fool proof and I haven't failed yet. I am looking forward to gaining more experience, so that I can do custom settings.
I don't know if I'd pay their retail price though.

How do I get the crust to brown?

You have a custom pro machine. It is programmable. Read your book. Your programme selection dial can be turned anticlockwise and here you can start your very own set of programs. Select all the parameters that are in the program that you like that you are happy with, change just one at a time. Perhaps raise the baking temp 4- 5 degrees, or extend the baking time 5-10 minutes. But don’t do both at the one time.
