Hi the sourdough recipe in the manual does not work . It is not clear regarding the starter. The revised manual just do away with the sourdough recipe altogether. Does anyone has a recipe for the custom loaf pro?

Hello Ansdong: I'm too lazy to mess around with a sourdough starter I'm afraid, however, I have had success using the Laucke premix Barossa Sourdough 2.4 kg size bread mix pack which contains 4 x 600gm premix parcels.

Laucke has provided guidance to use 15% less water than is stated on the package for the premix product (and I use a little less than 15% water), that could vary depending on altitude apparently. For a decent result I used: 400 ml water, 600gm packet of Laucke Barossa Sourdough Rye Premix, and 1/3 teaspoons of the Laucke supplied yeast. Using those quantities, and the Crusty setting on the Breville BM800, the bread takes about 3 hours 20 minutes to complete its cycle.

I bought the Laucke Barossa Sourdough and baked it just 30 mins before I received your reply. I followed the instructions on the package. Guess what? My dough rose and overflowed the pan and then the top sank after baking. It was an ugly loaf. :( I used 480 ml water and 1 and a half teaspoon of yeast! No wonder the dough is revolting. Lol .
Will try your suggestions of 400ml water and a third tsp of yeast.

I have had this BBM800 breadmaker about 6 months. It replaced a basic Breville machine which died after too much use. It was expensive to buy but I love the extra features even though I mainly cook Laucke premix bread. I use the recipe in the instruction book for the 1kg loaf. The loaf is very high to the top of the pan when cooked and appears to be full of air because as soon as it comes out of the container it deflates. I have read that water temp causes problems so I mainly preset the loaf when I go to bed at night for it to finish about 7am and this allows the water temp to increase during the night. Tap water is cold here during the winter. What else would cause the loaf to be full of air once cooked?
Also it appears that the paddle now has a lot of slack and is a bit loose. Is this a problem?

Hi Mineeb, as per P53 of the manual the air bubbles are caused by too much water and/or yeast. The top of the bread may also collapse. Try adjusting the amount of water or yeast. As for your second question, I think it is a problem. My machine also produces a squeaking noise during the kneading stage. I suspect the loose paddle causes the problem. I contacted Breville today and was advised to take the machine to the service centre for examination.

Hi Jessica, I tried the Laucke German Grain premix (600g pack, box of 4, 2.4kg total) and followed the Wholewheat Bread (100% WHOLEMEAL BREAD, page 90) recipe in the Breville manual . The finished product was quite a success, with the Laucke mix being like a cross between Wholemeal and Multigrain loaves that you would buy from the Bakery).

My only concern was that I needed to keep a close eye on the kneading phases, and intervened twice (press and hold start button to pause the machine), using a spatula to mix dry flour (that had been left behind) back into the dough. The mix was so sticky that it would collect in one corner of the pan and the paddle would slice through the mix instead of mixing and kneading as intended. I noticed that the machine worked much harder kneading this mix (than for crusty whites), and am concerned about accelerated spindle wear with this type of bread. Will try a slightly wetter mix next go, then experiment with custom flour/grain mixes. Keep you posted.

Despite cleaning collapsable paddle in recommended manner, mine will no longer collapse - it remains rigid in the upright position! Have soaked etc but to no avail. Machine is only two months old. Any suggestions?

Breville may have heard of this before and wish to answer but the only time our paddle ever becomes firm to move is when some bread has hardened in the overlap of the paddle and body of the pin they swivel on.

Being at the base of the unit the bread can cook within the narrow gap between the two elements. Especially if left in the baking chamber after bread is removed that can harden over time obstructing or making movement of the paddle more difficult. It also resists removal pretty tenaciously. Soaking as you have done then shaking under a fast stream of water with the possible use of a thin scraper or knife when this occurs has always worked fairly effortlessly for us.

We have probably never had a complete lock-up however if that is what you see. In that case perhaps the circlip between the two parts of the paddle has somehow locked itself in place.

Thanks Jaid for your response. Am happy to say that on reporting this to Breville via e-mail, I received a telephone response within 2 hours from Breville and they are going to send me a new paddle. Fantastic great customer service - wish there was more of it in Australia.

I have 2 of these bread makers and just think they have the best programing in the market place.
It would be nice to view the personal program settings, currently you can only modify them, so if you have not got them written down you do not know what they are?

Hello Paulus. You must go through some bread :-) I agree, excellent programming that would be even better with a way to manage settings.

I was daydreaming about this a few weeks ago and the only thing that hung in my mind was sort of a bit techy for most bakers. It included USB (or even radio :-) ) output and a little application which could read that output into a matrix where the selection is indicated but also the range of options so that changes could be made incrementally and saved and installed.

Associated with this settings management would be recipe detail. This would deal with contents and quantities and take over the screen until settings mode is reached. It would include Breville's Recipe recommendations and when used in matrix form discussed below in conjunction with settings would create a matrix capable of making and recording subtle adjustments.

The next enhancement came when you could select several of these matrices and slide them over the top of each other to review the differences. if for example a maximum of 9 different 'recipes' could slide over the top of each other then your matrix may look something like a sudoku with the possible numbers in each box coloured differently according to each sheet. Selecting one would highlight it for change but you could still see the range used in the other 'recipes'

It wouldn't be rocket science but my guess is that many users have not the need even to use the excellent programmability available already so...may be a while coming.

Hi cornish1, I recently bought the BBM800 for baking
gluten free bread using raw almond meal. My time perfected recipe has needed some modification with bake time and temperature. I reduced the bake temp down to 110C and kept the 135 minutes bake using the G'Free setting, but you had best trial your own according to loaf size etc. Be aware the dark thin crust is normal for these ingredients

I bought the Laucke bread machine pre-mix multigrain and cant find it in the manual book.it has a lot of other Laucke pre-mix recipe guides?

Hi Memelz, Packet mixes changes all the time so sometimes we don't have all the mixes. Based on us talking with Laucke they suggest reducing the reccomended water quantity on their packaging by about 10%.

Just wondering what size loafs this machine makes. Im looking to buy a bread maker but its just my partner and I at home and I don't want any bread to go to waste but I also dont want to be left with heaps if we do make it.

Hello Brenton, you can vary the size of the loaf you choose to make. I find that generally, you can use 1 cup flour to each 100 mls liquid - eg 3 cups flour and 300 mls water, or 4 cups flour and 400 mls water. Of course depending on the type of flour used, you may have to adjust the quantities slightly. You can then make a loaf size to suit the two of you. You can also freeze the bread (cut into slices first) if you make extra, and just pull out the number of slices you need each day.

Hi Brenton, This breadmaker will make 4 loaf sizes. 500g, 750g, 1kg and 1.25kg sizes. Hope this helps along with Berne's comment also.

Does this make bread in a shape similar to what you would buy in the supermarket? Or is it the "odd shaped" breadmaker shape? Thanks :)

It is not the standard supermarket bagged cuboid form. It is however a pretty regular high loaf form particularly of the specialised bakery type. The height varies a bit according to your mix and quality of yeast. Although you can vary it, using the largest settings it is quite a large and high loaf. I think there are 3 standard sizes. Should go an look on the machine but wont. the plan form does not change just the height, the largest volume would be the only one where you get that more bulbous top you would be familiar with in high loafs. I have only had mine all this year but it gets a lot of use and performs admirably. The form may not match the supermarket one but it is still great for school lunches as well as great big sandwiches and chunks of bread with salad and mediteranean food. The machine can also be used to mix and rise many types of bread (including flat breads and pizza bases) which are formed and cooked elsewhere.

Hi all, sent an email to Breville 19-6-13 and it appears to have been ignored.

'Hi, our BBM800 fails to activate on occasion. It’s only happened 3 times in 2 years and this morning I found if I place the machine in front of the heater for a minute or so, it then comes on.
My question: does the BBM800 have some sort of thermal switch preventing the machine from turning on if its too cold?
I’ve checked the purchase date and it’s out of warranty by 2 months, of coarse........
Bought from Harvey Norman at Gepps Cross in Adelaide, very happy with this machine but am concerned with this one fault.'

So, an update from me. Baking a loaf this morning and the power dropped out twice (at machine only). Once while adding ingredients and the again during 'rise 3'.
This is now proving to be extremely unreliable and literally has to be slapped around to make it come back on.
This is now the last loaf I'll bake with it. It's back to Harvey Norman tomorrow to see what they can do.

Hi Mark, Engineering got back to us and said this is indeed thermal protection to prevent the unit from starting when it is too cold or too hot. We mention this on page 31 and in the trouble shooting area on page 57 of our instruction booklet. The recommended temperature is 20~25C so it is possibly quite cold in your kitchen?

Hi Breville,
Am loving the machine.
I bought it straight off the shelf though and discovered when i got home that it didint have the collapsible paddle included. My bread has been working out fine without it but id love to have one so i dont have the whole in my loaves!
Can you please tell me where i can get one and how much they are? I am located in Perth, WA but am happy to get it online if there is no where over here.
Everyone that comes over is just loving my machine - i think i have convinced 3 friends to get one now!

I have one of these and it works fantasticly, however about 20 minutes into the kneeding cycle the machine emits three loud noises in quick succession (no more, no less). The sound is different to the normal mixing noises and happens every time. It sounds like something may be slipping in the mechanism. The cycle continues normally and the bread is perfect - has anyone else had this happen?

:-) Breville may have a re-think on the sound of this alarm after the traffic here. Your sound could be something more sinister I suppose but the extreme likelihood is that it is the standard sound the sound gives 15 minutes into standard cycle to signal that it is dropping any nuts/fruit and the like from their holder/chute in the lid into the mix. It sounds whether or not you have anything in there and that gives you the opportunity to manually drop material into the bread bin directly if desired. Sometimes, rare in my case you may want to put more of these extras in than the top chute would permit. It is kind of a raspy roar but in our case that is perhaps one of only two things which can alert us from any level or place in the house. Earlier readers will know what the other is.

The noise you are hearing is just the sound of the machine moving from kneading to resting etc.. This has been answered by Breville on a couple of occasions. My machine does this, at first I freaked, then I spoke to Breville and they explained it to me, so I don't pay any attention to the noise anymore. If you are worried get in touch with Breville, if you are still under their warranty take it back to store and see if you can get a replacement. In my opinion, it is just beeping function this machine has letting you know, there is function change.

Hi Dave, The noise is when the fruit and nut dispenser drops its base. We have had a few people ask as it can sound a little unusual. This is completely normal but we have passed on everyone’s comments to our R&D department so they can possibly try and adjust the sound a bit!

Hi there, I just bought this bread maker and was trying for the first time. I use basic white bread and everything are fine until it at rise 3 stage. The light are off and no movement. The dough looks fine. I tried to turn on again after 2hrs but still no respond at all. Please help?...

I think you need to contact the store you bought it from, and also contact Breville.
But also remember there are long stages in the rising process, the light go off very quickly (inside one) the LCD stays on a while. If you are really worried, get in touch with the store or Breville. Good luck

Tks, but thre isn't any cake recipe in the manual. I just bought one and tried to bake. The machine stop when it at rise 3. I tried to turn on but seems the machine is not responding. Do you have any idea?

I purchased the Bbm800 on the weekend and its already given us two beautiful loaves!
We scooped this up as a showroom one at a really good deal as it was the last that the store had in stock. I didint realise until we got home that it was missing a collapsible paddle - it only had the 1 paddle - the fixed one for jam. Can you point me in the right direction for where i can go to purchase a collabsable paddle? The jam one however has worked anyway but i may as well use my machine to its full potenital!!
Also - are their any community pages or groups anywhere that people might be posting recipes that you are aware of?

Hi Michelle, The noise you would be hearing is a result of a component of the fruit and nut dispenser dropping mixture into the bread pan. This is normal and nothing to worry about.

It can also be the handle of the loaf pan, I remove the handle then put it back on when the cycle is complete.

I realize this is a site for Australians ;) but we Canadians buy Breville products too.
We have been really trying a bit too hard to decide if we should buy this machine over a Panasonic and I am posting our question here in the hope the Breville rep responds.
We have many appliances from Breville including the smart-scoop which wasn't the smartest idea because it adds to our waistlines.... but the bread machine everyone is saying the pan is too big for a one pound loaf, the smallest setting, and the loaf comes out mishapen. Is there a smaller pan available as an option to use in the machine to make the smaller loaf less of a problem? The loaf pan likely doesnt need changes made for heat or the stirrer paddle, just the dimensions need to change...
Anyway just a thought, is there such a thing available in Australia? Or anywhere else? Or a plan to offer one? If you did it would make this buy a no-brainer and we do like the style and ease of use.

Hi Dave. Ive had several of the Breville Bread machines over the last 20 years (or so). Have made all sizes of loaves and havent had any major problems with the smaller loaf size. What you will probably find is that the loaf does not settle & rise quite as nicely on the 3rd rise and therefore doesnt bake nice & round like a larger loaf. Adjusting the water content slightly (up or down in teaspoon increments) should stop this from happening and give you a prettier loaf.

I would really like to know if this bread maker has settings such as kneading the dough ONLY and proofing of dough ONLY (separate settings) Are there any settings from this machine that stops just before baking?

Would like to make rolls instead of loads using this machine. So it would be best if it has a selection of kneading ONLY and proofing ONLY. So I can roll them in to different shapes.

Hi Amanda,
Yes, you would use the Dough-Bread setting for your rolls. There are also Dough-Pizza and Dough-Pasta settings. The Dough-Bread setting mixes, kneads and does the first 'rise.'

The other Pizza setting shortens the 'rise' time and pasta removes it altogether.

The good thing about this machine is that you can programme all the steps yourself and operate using the 'Custom' setting. For your use if the timing was not quite as you like it for the rolls and like, you would be best to take the Dough-Bread setting and Modify it. Modify can show you what is pre-set, you can change and save as your own setting accessible through 'Custom'

Only getting getting it this year already it has turned out a hundred plus loaves and dough of all kinds; all with minimum time and work on our part and very proficiently. I am a true convert from our hand preparation of bread. The time alone saved already exceeds the cost of the machine and the saved purchase price of bread would have also.
