Can the KSM7590 handle smaller ingredient amounts as well as the Artisan and Classic mixers?

Short answer is no. It’s supposed to be able to whisk a single egg white. I find it needs at least 3. The machine is great for large volumes, but regular cake mix or dough quantities, it just doesn’t pick up or mix. I’ve been really disappointed with the pick up of ingredients, even at large volumes. You constantly have to stop the machine and scrape and turn the mix.
Thank you so much for the info. I really wanted a bowl-lift mixer (for no particularly good reason), but it sounds like I’ll be buying a tilt head instead. I rarely make large quantities, but was more concerned with the ability of smaller mixers to handle heavy bagel doughs etc. I will probably get the Artisan model.

What is the difference between the KSM7581 and KSM7590? They seem to have slightly different dimensions, but otherwise identical technical specs. Will the KSM7590 ever be available in red?

7590 Has stainless steel attachments as the 7581 has some coated attachments and I wanted stainless steel to ensure the coating didn’t chip off.
Thanks, that's good to know. I wonder why the overall dimensions are different (source: Kitchenaid website).

I am looking at this machine for pizza dough and bread, but also want it to be able to do normal cake and biscuit batches (i.e. Normal quantities not bulk), is the bowl too large for a normal mix? Or will I be able to do both with it?

The bowl is 6.9L, and that's the reason I got this machine as the others have 4,7L I think. It's really big enough for pizzas and bread, biscuits or cakes.
I've my macaron recipe (my old machine the bowl used to be on maximum capacity with the same recipe) and with this bowl it was amazing. Fast, quieter and the bigger bowl make it easier.
Hope you like. Some kitchen shops normally runs demonstrations, ask some places.
I loved mine. I'm happy with my decision to upgrade.
Hope I've helped you.

Hi, The KSM7590 will most certainly be appropriate for mixing both pizza doughs and breads, as well as smaller sized cake and biscuits batches. The bowl and beaters are designed to accommodate all quantities. We hope this helps and if you have any further questions do not hesitate to contact us, Thanks the KitchenAid Team
Hi Little O,
I make pizza and bread dough in my machine all the time and it works perfectly.
As for single bstch cookie reipes, no problem with that either. I have had my mixer whip a single egg white before, took a while to start but then no worries.
If you do make the investment, I'm sure you will love it.

Well, I had a kenwood before and I had the same problem before. I got the professional expecting it to be stronger. I had no problem until now, I've been very happy so far with everything I did.
I haven't tried any "big" or double size recipes yet, as it is 6,9 L to see how it goes.
But really comparing with my first one kenwood, I'm very happy, very strong, faster and quieter.
