Global Sai-06 Chef Knife - awesome but blade heavy!
After buying a Miyabi Damascus knife I felt it only fair to get one of Gobal's comparative offerings - the Sai-06, a 9.5 inch beast with 3 layer cladding protecting a differently heat treated Cromova18 cutting edge with Sus410 cladding.
The balance is blade heavy...surprising for a Global. I could work around it to some extent by using a more forward pinch grip, but got it reground shorter (245mm down to 230 mm) which vastly improves the balance. The weight is down a bit too (313g) which is also a plus. Overall feels way more nimble!

se knives are supposedly sharpened at 12.5 degrees...but after some initial tests I was pretty sure that the knife not as sharp as my other Globals (ground at 11 degrees), so a little session on the water stones and - wow - amazingly sharp! A very clean edge (much better the classic Globals) that rivals my Miyabi Birchwood Gyuto! These Sai branded knives seem to respond well to higher grit levels (e.g 8000) and because they are a very clean edge have *more* bite if I don't strop them at all. This guy is very heavy (stock 320g) with a relatively thick spine, so that it cuts as well as the Miyabi (177g) is simply astounding. I'm impressed and enjoying the knife. The cladding steel (sus410) is initially reactive (i.e leaves marks) to fingers and food acid...but this seems to decrease dramatically after some use...I'm not sure what is going on there, but I'm pleased that the effect is lessening.Similar opinion?
